PALEO BLUEBERRY CRISP

Ingredients:

FILLING INGREDIENTS

  • 1/2 pint of blueberries or any berry
  • ~1-2 tsp lemon juice

CRUMBLE INGREDIENTS

  • 1/4 cup almond flour
  • 1/8 cup ghee or coconut oil, melted
  • 2 tsp maple syrup
  • 1/4 tsp cinnamon or pumpkin pie spice
  • a pinch of salt
  • pecans or sliced almonds
  • Lemon zest from 1/4 of a whole lemon

Directions:

  1. Preheat oven to 375° F.
  2. Dry berries.
  3. Toss berries with lemon juice and tapioca flour.
  4. Layer in shallow baking ramekins
  5. Mix all the crumble ingredients.
  6. Spoon over the berries.
  7. Bake for 20-30 minutes, or until the topping is golden brown.
